Once you have your cucumber and apples chopped up, toss them with lemon juice. This will help keep the apples from browning.
Then, in a small bowl, whisk together the olive oil, apple cider vinegar, salt, and ground black pepper to make your dressing.
Drizzle your dressing over the cucumber and apple, and toss to coat. And that’s it! So simple!

Apple Cucumber Salad
Ingredients
- 1 cucumber halved and sliced
- 2 apples core removed and diced
- 1/2 lemon juiced
- 2 tbsp olive oil
- 1 tsp apple cider vinegar
- 1/4 tsp salt
- 1/4 tsp ground black pepper
Instructions
- In a medium bowl, toss cucumber and apples with lemon juice.
- In a small bowl, whisk together olive oil, apple cider vinegar, salt, and ground black pepper until well combined.
- Drizzle dressing over cucumbers and apples and toss to coat.
Notes
- If using bottled lemon juice instead of fresh, use about 1.5 tablespoons.
- Store any leftovers in an airtight glass container for up to 3-5 days.
