These chocolate chip chickpea cookie bars take all my favorite parts of a chocolate chip cookie (chocolatey goodness, gooey middle, sweetness) and combine it with plant-based protein to make these bars more satiating so you don’t have that sugar crash an hour later. They’re the perfect dessert or grab-and-go snack!

One of the best parts of this recipe is that you can easily mix together all the ingredients in your food processor! Just combine everything, except for the chocolate chips, in a food processor or high-speed blender and blend until smooth. If your food processor isn’t big enough to accommodate all the ingredients, that’s okay! Just use the food processor for the chickpeas and rolled oats, and then you can mix everything else together by hand.
Stir in the chocolate chips and pour cookie batter into a greased 8×8″ glass baking dish.
Bake your chocolate chip chickpea cookie bars in the oven at 350 degrees Fahrenheit for 35-40 minutes. Let the bars cool for about 10 minutes before cutting and serving. Enjoy!

Chocolate Chip Chickpea Cookie Bars
Ingredients
- 2 (15 oz) cans chickpeas drained and rinsed
- 1 1/2 cups brown sugar packed
- 1 cup rolled oats
- 1/4 cup unsweetened applesauce
- 3 tbsp vegetable oil
- 2 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350 degrees Fahrenheit and grease a 8x8" glass baking dish.
- Blend all ingredients except for chocolate chips in a food processor or high-speed blender until smooth.
- Stir in chocolate chips and pour cookie batter into greased baking dish.
- Bake cookie bars in preheated oven for 35-40 minutes.
- Let bars cool for about 10 minutes before cutting and serving.
Notes
- If your food processor or blender is too small to fit all the ingredients in it, you can blend up the chickpeas and rolled oats and then stir everything else together in a mixing bowl.
- If you need this recipe to be gluten-free, make sure you're using certified gluten-free oats.
- Store leftovers in a covered container in the refrigerator for up to 3-5 days.
