This savory crockpot meal combines tender, juicy chicken with red potatoes, carrots, green beans, and a delicious honey garlic sauce.

When the sun starts setting earlier, I notice my motivation to cook at night get smaller and smaller… To offset this, I do a lot of crockpot cooking. Everything cooks while I’m at work, and I come home to a hot, ready-to-eat meal! This savory crockpot honey garlic chicken and veggies has quickly become one of my favorites. It’s got everything: plenty of tasty veggies and a delicious honey garlic sauce. Plus, it’s easy to throw together!
To get things started, prep all your veggies. Dice your onion, halve your baby red potatoes, peel and chop your carrots into about 4 inch pieces, mince your garlic, and trim your green beans. If your baby red potatoes are large, cut them into quarters. You can also wait to trim your green beans until later, though I like to do everything all at the same time.
Then, add your chicken, onion, potatoes, and carrots to your crockpot.
Then, whisk together the soy sauce, honey, olive oil, rice vinegar, garlic, dried parsley, dried rosemary, dried thyme, and dried oregano in a small bowl. Pour the mixture over your chicken and vegetables. Cover your crockpot and cook on low for 7-8 hours.
30 minutes before your cook time is up, add the green beans. Cover and continue to cook on low until chicken is cooked through and all the vegetables are tender.

Crockpot Honey Garlic Chicken and Veggies
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 medium yellow onion diced
- 8 baby red potatoes halved
- 6 large carrots peeled and cut into ~4" pieces
- 1/2 cup low-sodium soy sauce
- 1/4 cup honey
- 1 tbsp olive oil
- 1 1/2 tbsp rice vinegar
- 4 cloves garlic minced
- 1 tbsp dried parsley
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 lb green beans trimmed
Instructions
- Place chicken breasts, onion, potatoes, and carrots into crockpot.
- Whisk together soy sauce, honey, olive oil, rice vinegar, garlic, dried parsley, dried thyme, and dried oregano. Pour mixture over chicken and vegetables in crockpot.
- Cover and cook on low for 7-8 hours.
- Add green beans for the last 30 minutes of cooking.
