This deliciously fresh bulgur bowl is packed with plant-based protein, juicy peaches, and a phenomenal ginger, mint, lime dressing.
Jump to RecipeEvery summer I get really excited for the peaches. They’re finally in season, on sale, and SO GOOD. This summer, in particular, I’ve been obsessed with the combination of ginger and peach flavor (hence my latest Ginger Peach Overnight Oats). In honor of the end of summer quickly approaching, I combined a ton of delicious, fresh flavors that scream summer in this phenomenal grain bowl. Trust me, you won’t be disappointed!
One of my favorite things about this recipe is that it tastes pretty fancy, but is actually super simple to throw together. And–bonus points–you don’t need to use your stove to cook the bulgur! Simply boil some water (I did this in the microwave), and add it to the bulgur in a bowl. Cover with saran wrap, and just let it sit for 20-30 minutes. It’ll cook just fine, without you needing to heat up your kitchen (a miracle for those of us with a gas stove and tiny apartment). Just make sure the seal is airtight to trap the heat in the bowl!
While your bulgur is cooking, you can prep the ingredients for your dressing. All you have to do is juice a lime, grate some ginger root, and finely chop some fresh mint.
Then, whisk together olive oil, lime juice, honey, grated ginger, and your finely chopped mint to make a dressing.
Next, chop up your peaches and drain and rinse your chickpeas. All of your ingredients can be prepared in the time it’ll take for the bulgur to cook.
Once your bulgur is tender, drain any excess water, fluff, and set aside to cool. Then, all you have to do is add everything to a large bowl, and gently mix to combine.
Even more bonus points? This recipe is incredible leftover! Store any leftovers in an airtight container in the fridge for up to 1 week. Enjoy! Ginger Peach Bulgur Bowl
Ingredients
- 1 cup bulgur dry
- 2 peaches cut into ~1 inch chunks
- 1 (15 oz) can chickpeas drained and rinsed
- 1/4 cup olive oil
- 1 lime juiced
- 1 tbsp honey
- 3 tsp fresh mint finely chopped
- 2 tsp fresh ginger grated
Instructions
- Place bulgur into a medium, heat safe bowl. Pour 2 ½ cups of boiling water over bulgur and cover bowl with lid or saran wrap. Let sit for 20-30 minutes, or until bulgur is tender. Drain excess water, fluff with a fork, and set aside to cool.
- Whisk together olive oil, lime juice, honey, fresh ginger, and fresh mint to make a dressing.
- Gently mix together cooked bulgur, peaches, and chickpeas. Drizzle with dressing, stir well, and serve.

Notes
- Mix it up by trying farro, quinoa, or another whole grain instead of bulgur (you can do this to make the recipe gluten-free too, if needed).
- To make vegan, simply use agave or your favorite liquid sweetener instead of honey.
