This delicious, easy to make skillet dish combines turkey with whole grain brown rice and tender green beans.
Jump to RecipeI’m a big fan of skillet meals because they’re simple to make and have minimal clean up. There’s also so many different ways to throw together a grain, protein, and veg to make an entirely different meal! This turkey, green bean, and rice skillet is a particular favorite of mine. Not only is it easy to make, but it’s something that everybody in my family enjoys!
There’s no complicated cooking techniques when it comes to this recipe either which is always a big win when you need an easy, weeknight supper! To get started, dice your yellow onion and mince your garlic. You can chop up your green beans while you chop your other veggies, or you can wait until your skillet is cooking to get them ready to go.
Then, heat some olive oil in a high-walled skillet over medium heat. Add your ground turkey and brown until cooked through. You don’t have to use the lid for this if your turkey is thawed before cooking. Mine was still a little frozen on the inside, so I used the lid to trap the heat and thaw the meat more quickly as it browned.
Once your turkey is cooked through, add your minced garlic and diced onion. Saute until the onion is translucent, this should take about 3 minutes.
Then, add the tomato sauce, seasonings, brown rice, and chicken stock. Stir everything well, and bring the mixture up to a boil.
Once boiling, cover, reduce heat to low, and simmer for 30-40 minutes or until the brown rice is tender. Stir in the green beans for the final 10-15 minutes of cooking.
And just like that, you have a delicious, satisfying meal that feeds up to six people! If you try out this recipe, please be sure to tell me what you think and give it a rating in the comments below. Notes
- Frozen or canned green beans can be added instead of fresh, if desired. If using frozen, add for the final 3-5 minutes of cooking. If using canned, drain beans and add immediately before removing skillet from heat.
- Water can be used instead of chicken stock, if desired. I use chicken stock to give the dish more robust of a flavor.
- Ground chicken, beef, or pork may be used instead of turkey, if desired.
