Jump to RecipeThe recipe was born out of a simple question: can I make an arugula smoothie that actually tastes good?? This is a question we first tackled over on the Hookom on Health live stream on Twitch. Before long, I realized that yes, you can make a smoothie that tastes absolutely delicious using arugula.
Why this quest, you may ask? Well, I love arugula. I think it’s awesome in salads, on tacos, on a burger. The problem is that I’m pretty much the only person in my household who likes it. And unfortunately, arugula seems to only come in large containers where I shop. So it becomes a bit of a challenge for me to use all of it before it inevitably goes bad. One of my favorite ways to use up leftover produce is in smoothies (since you’re blending it all up anyway, who cares if it’s a little wilty?), and so my journey to develop this recipe began.
This smoothie is absolutely packed with nutrition, and super easy to throw together as well. I even made it vegan so it’s accessible to the plant-based crowd. And, oh man, is it good! I couldn’t believe how amazing this green smoothie is–you can’t even tell there’s a full cup of arugula in there. But don’t take my word for it, try it out for yourself!
The prep work for this recipe is so simple and quick to do. Just juice your lime and lemon and grate some fresh ginger. Then, throw everything in to your blender and blend it up!
Blend for about a minute, or until smooth. Depending on your blender, you may have to scrape the sides a bit with a spatula to make sure there are no clumps of arugula left un-blended.
And just like that you have a delicious, fresh, nutrient-packed smoothie to sip on and enjoy!

Mango Arugula Smoothie
Ingredients
- 1 cup arugula
- 1 ripe banana
- 1/2 cup coconut water
- 1/2 cup frozen mango
- 1/2 lemon juiced
- 1/2 lime juiced
- 1 tbsp fresh ginger root grated
Instructions
- Place all ingredients in a blender, and blend until smooth, about 1 minute.
Notes
- You can use a fresh banana or a frozen one, based on your preference and what you have on hand.
- To add a bit of extra tropical flavor, try using a pineapple flavored coconut water.
