Ninja Foodi Chicken Fajitas

My Ninja Foodi is easily my favorite kitchen appliance. Especially in the summer because it’s a cooking method that won’t heat your entire house! So when you’re looking for an easy (but still warm) meal this summer, you can’t go wrong with a Foodi recipe. And who doesn’t love chicken fajitas?!

The first thing you’ll want to do for this recipe is prep your fajita seasonings. In a small bowl, mix together the chili powder, paprika, ground cumin, garlic salt, ground black pepper, and cayenne pepper.

Next, cut your chicken breasts into small, bite-sized pieces and place into a medium-sized bowl.

Toss the chicken pieces with half of the olive oil and half of your seasoning mixture. Make sure all of the pieces of chicken are well-coated.

Spread the chicken in an even layer in the air crisper basket of your Ninja Foodi. Set the Foodi to the ‘air crisp’ function at 390 degrees Fahrenheit for 15 minutes.

While the chicken is cooking, prep your veggies! Slice 2 bell peppers and half of a purple onion. Toss them in a medium-sized bowl with the other half of the olive oil and fajita seasonings. Once again, make sure they are well coated.

After the chicken has cooked for 15 minutes, add the veggies to the air fryer basket. Try to keep everything in as even of a layer as possible. Set the Foodi back to ‘air crisp’ at 390 degrees Fahrenheit for another 15 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit and the veggies can be easily pierced with a fork. Toss everything halfway through for more even cooking.

Serve in warmed corn or flour tortillas, and enjoy!

Ingredients

  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 bell peppers (any color) sliced
  • 1/2 medium purple onion sliced
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp paprika
  • 1 tsp garlic salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp cayenne pepper
  • 6 small corn or flour tortillas

Instructions

  • In a small bowl, stir together chili powder, paprika, ground cumin, garlic salt, ground black pepper, and cayenne pepper.
  • Toss chicken with 1 Tbsp olive oil and half of the seasoning mixture until well coated.
  • Spread chicken evenly in air crisper basket in Ninja Foodi. Set Foodi to ‘air crisp’ at 390 degrees Fahrenheit for 15 minutes.
  • Toss bell peppers, and onion with remaining olive oil and seasoning mixture until well coated.
  • Add veggies to chicken evenly in air crisper basket in Ninja Foodi. Set Foodi to ‘air crisp’ at 390 degrees Fahrenheit for another 15 minutes or until chicken reaches an internal temperature of 165 degrees Fahrenheit, tossing halfway through for even cooking.
  • Serve in warmed tortillas.
