1lbboneless, skinless chicken breastscut into bite-sized pieces
1large sweet potatochopped into ~1" pieces
1bunchasparagus (about 3 cups)chopped into ~1" pieces
1tsppaprika
1tspdried oregano
1tspground black pepper
Instructions
Heat vegetable oil in a large skillet over medium-high heat. Add garlic and saute until fragrant, about 30 seconds.
Add chicken and saute for about 5-7 minutes, or until no longer pink.
Add sweet potato and saute until tender and can be easily pierced with a fork, about 10-15 minutes.
Add asparagus and saute until tender and can be easily pierced with a fork, about 4-5 minutes.
Add paprika, dried oregano, and ground black pepper and stir to combine. Remove from heat.

Cut slits into your sweet potato and microwave for about 1 minute to make it easier to chop up. Note that your cook time in the skillet will be less as well since the sweet potato will be partially cooked by the microwaving process.
