Black Bean Brownies
These gooey black bean brownies add extra protein and fiber to the brownie game without sacrificing taste.

Ingredients

(15 oz) can
black beans
drained and rinsed
1/2
cup
rolled oats
3
large eggs
1/2
cup
semisweet chocolate chips
optional, but highly recommended
1/4
cup
cocoa powder
1/4
cup
honey
3
tbsp
vegetable oil
1
tsp
pure vanilla extract
Instructions
Preheat oven to 350 degrees Fahrenheit and lightly grease an 8x8 square pan.
Blend black beans and rolled oats in a food processor or blender until smooth.
Mix together all ingredients in a large mixing bowl until combined.
Pour batter into prepared 8x8 square pan.
Bake for 30 minutes, or until brownies start to pull away from the edges of the pan.

Notes
Make sure your rolled oats are certified gluten-free, if needed.
If you don't have a food processor or blender, beans can be mashed with a potato masher or fork until smooth.
For best results, consume brownies within 3-5 days, and store leftover brownies in the refrigerator.
