Ingredients
For the cilantro lime rice
1cupbrown rice
1limejuiced
1/4cupfresh cilantrofinely chopped
For the black beans
1tbspolive oil
1medium purple oniondiced
4clovesgarlicminced
1tspground cumin
1tspchili powder
1/2tspground black pepper
1/4tspcayenne pepper
1 (15 oz)canblack beansdrained and rinsed
For the rest of the bowl
1bell pepper (yellow, red, or orange)chopped
2Roma tomatoeschopped
2cupsRomaine lettucechopped
Garnishes (optional)
1cupcheddar cheeseshredded
1/2cupsour cream
fresh cilantrochopped
hot sauce
Instructions
Bring brown rice and 2 cups of water up to a boil. Then reduce heat to low, cover, and simmer for about 45 minutes or until rice is tender and all the water has been absorbed. Once rice is cooked, stir in lime juice and fresh cilantro.
Heat olive oil in a skillet over medium-high heat. Add purple onion and saute for 3-5 minutes, or until onion is translucent.
Add garlic and saute until fragrant, or about another 30 seconds.
Add seasonings and black beans and saute for about 3-5 minutes, or until beans are heated through.
To build the bowl: start with a bed of cilantro lime rice, add black beans, bell pepper, roma tomatoes, and lettuce. Top with garnishes, if desired.
