Garlic Parmesan Smashed Potatoes
If you've never tried smashed potatoes before, you're missing out! These smashed potatoes add garlic, parmesan, and butter into the mix for a delicious side dish.

Ingredients

lb
baby yellow potatoes
6
cloves
garlic
minced
2
tbsp
salted butter
1/4
cup
Parmesan cheese
grated
Instructions
Preheat oven to 400 degrees Fahrenheit, and line a baking sheet with foil or parchment paper.
Spread baby potatoes evenly onto baking sheet and roast for 20 minutes.
Melt butter, and mix with garlic and Parmesan cheese.
Smash each potato with a fork, and drizzle butter mixture evenly overtop each potato.
Roast for an additional 10 minutes, or until potatoes are tender.
Notes
Fingerling potatoes, baby red potatoes, or other small potatoes can be used instead of baby yellow, if desired.
Make prep even easier by using pre-minced, jarred garlic.
Season potatoes with salt and pepper to taste, if desired.
