Lemon Overnight Oats
These simple lemon overnight oats are fresh, zesty, and perfect to grab-and-go for a healthy breakfast!

Ingredients

cup
milk of choice
(I typically use soy)
1/2
cup
rolled oats
1/2
lemon
juiced
1
tbsp
chia seeds
1
tbsp
honey
Instructions
Add all ingredients to a
mason jar
. Stir well, cover, and refrigerate for at least 8 hours.
Stir well and enjoy!
Notes
Lemon juice causes cow's milk to curdle, so I would not recommend using dairy milk in this recipe. Any plant-based milk will work well.
Chia seeds
are technically optional in this recipe. If you omit them, use a little less milk.
