Mint Hummus
Refreshing and savory, this mint hummus is the perfect spread for a sandwich or wrap or accompaniment to your favorite dippable snack.

Ingredients
1
(15 oz) can
chickpeas
drained and rinsed
1
lemon
juiced
2
tbsp
fresh mint
1
tbsp
tahini
1
tbsp
olive oil
Instructions
Combine all ingredients in a
large food processor
and blend until smooth, about 2 minutes. Scrape the sides of the food processor and blend for another minute.
Spread on a sandwich or wrap, or serve with apple slices, pretzels, pita chips, etc!
Notes
Store leftovers in an
airtight glass container
in the refrigerator for up to 5-7 days.
If hummus is too thick for your liking, add a little more olive oil to thin it out.
For a smoother hummus, remove the skins of the chickpeas prior to pureeing.
