Set Foodi to 'bake' at 325 degrees Fahrenheit for 5 minutes to preheat it, and grease two mini (5.75x3.25") loaf pans with cooking spray or butter.
Add all wet ingredients to a large mixing bowl and stir until combined.
Add all dry ingredients to a separate mixing bowl and stir until combined.
Slowly add dry ingredients to wet, stirring gently until just combined. Batter will be thick.
Pour or scoop mixture into greased loaf pans, and set loaf pans onto rack in Ninja Foodi pot. Close air crisping lid (attached), and set Foodi to 'bake' at 325 degrees Fahrenheit for 45 minutes, or until a toothpick inserted into the center of each loaf comes out clean.
Carefully remove loaf pans from Foodi pot and set onto wire cooling rack. Once pans have cooled and you can safely touch them with a bare hand, remove loaves from pans and allow to finish cooling on wire cooling rack.
Notes
Store any leftovers in an airtight silicone storage bag or plastic storage bag for up to 5-7 days.
Preheating the Foodi is important, so don't skip this step!
