1lbboneless, skinless chicken breastspatted dry and cut into bite-sized pieces
For the sauce:
1/2cup100% orange juice
3clovesgarlicminced
1tbspfresh gingergrated
1tbsppacked brown sugar
1tbsprice vinegar
1tbspsoy sauce
1/4tspred pepper flakes
Zest from one orange
For the corn starch slurry:
1tbspcorn starch
1tbspwater
To garnish:
2green onionsthinly sliced
Instructions
Set Ninja Foodi to 'saute' on medium. Once heated, add vegetable oil and chicken and saute for 3-5 minutes, or until chicken starts to get golden brown. Stir constantly to prevent chicken from sticking.
Once chicken is no longer pink, add 2 tbsp of the orange juice to deglaze the bottom of the pot. Use a wooden spoon to scrape any stuck-on bits off the bottom of the pot.
Add the rest of the sauce ingredients to your Foodi and stir well until combined. Put pressure cooking lid on Foodi, secure and lock it, and turn the nozzle to 'seal'. Set Foodi to 'pressure' on high for 5 minutes. Allow Foodi to naturally release pressure for 10 minutes before turning nozzle to 'vent' to release the rest of the pressure and opening the lid.
In a small bowl, whisk together the corn starch and water until combined.
Set Foodi to 'saute' on low. Add your corn starch slurry to the orange chicken and stir slowly for 2-3 minutes, or until the mixture has thickened. Turn off Foodi, and let stand for an additional 3-5 minutes to continue thickening before serving.
Garnish with green onions, and serve with rice or noodles. Enjoy!
Notes
Make sure that you're using a wood or silicone spoon to scrape the bottom of the pot. Metal will scratch the pot surface!
