Ingredients

olive oil
1
lb
lean ground turkey
1
medium yellow onion
diced
4
cloves
garlic
minced

large sweet potato
cut into ~1 inch cubes
1
tsp
ground cumin
1
tsp
smoked paprika
1/4
tsp
cayenne pepper
1/2
cup
mozzarella cheese
shredded
1/4
cup
fresh parsley
chopped
Instructions
Heat olive oil in a skillet on the stove over medium-high heat. Add ground turkey and brown until cooked through, about 6-8 minutes.
Add onions and saute for about 2-3 minutes, or until onions are translucent.
Add garlic and saute until fragrant, about 30 seconds.
Add sweet potato and saute until tender and can be easily pierced with a fork, about 10 minutes.
Add ground cumin, smoked paprika, and cayenne pepper and stir to combine.
Sprinkle mozzarella cheese on top, remove from heat once melted. Garnish with fresh parsley and serve.

Add additional raw vegetables as desired.
A russet potato can be used in place of the sweet potato, if desired.
Ground beef, chicken, pork, or other ground meat can be used instead of turkey, if desired.
