Turkey Barley Stuffed Peppers
Comforting and savory, turkey barley stuffed peppers are a full meal all in one pepper. Plus, they're easy to make in your Ninja Foodi or air fryer!

Ingredients

tablespoon
vegetable oil
1/2
pound
ground turkey
2
green onions
thinly sliced
1/4
teaspoon
garlic salt
1/4
teaspoon
dried rosemary
1/4
teaspoon
dried thyme
1/4
teaspoon
ground black pepper
1/2
cup
tomato sauce
1/2
cup
cooked barley
2
bell peppers (any color)
tops cut off and seeds removed
2
tablespoons
shredded parmesan cheese
Instructions
Heat vegetable oil in a medium skillet over medium heat. Add ground turkey and brown until cooked through, about 3-5 minutes.
Add green onions, garlic salt, dried rosemary, dried thyme, and ground black pepper to turkey and saute for 1-2 minutes.
Add tomato sauce and barley to skillet and stir until everything is evenly incorporated. Remove from heat.
Fill each of the peppers with the turkey barley mixture and place filled peppers into air crisper basket in
Ninja Foodi
.
Set Foodi to 'air crisp' at 355 degrees Fahrenheit for 8 minutes.
Sprinkle parmesan cheese over peppers and air crisp at 355 degrees Fahrenheit for another 5 minutes, or until cheese is melted and golden brown.
Remove peppers from Foodi and serve immediately for best results.
Notes
Store any leftovers in an
airtight glass container
in the refrigerator for up to 3-5 days.

To cook your barley: use about 1/4 cup barley and 1/2 cup water to make 1/2 cup of cooked barley. Bring barley and water up to a boil on the stove, cover, reduce heat to low, and simmer for 15-20 minutes or until barley is tender.
