In a large bowl, combine pears, maple syrup, and ground cinnamon. Stir gently until fruit is well coated. Spoon into prepared baking dish.
In the same, now empty, mixing bowl, stir together the flour, baking powder, salt, coconut oil, brown sugar, and oats until crumbly in texture. Sprinkle over pear mixture.
Bake in preheated oven for 35-45 minutes or until lightly browned. Let cool for 10-15 minutes before serving.
Notes
If this recipe being vegan isn't important to you, you can sub 4 tbsp of cold butter instead of the coconut oil. Just cut the butter into the flour, baking powder, and salt mixture, using two forks, until coarse in texture before adding the brown sugar and oats.
Store any leftovers, covered, in the refrigerator for up to 5-7 days. That's one of the reasons I love this baking dish, it comes with a lid!
