Stuffed peppers are an incredible meal-in-one! You get plenty of veggies from the pepper, and can stuff them with whatever your heart desires! These beef quinoa stuffed peppers are packed with whole grain goodness and plenty of protein. The quinoa also provides some great fiber, and all the seasonings make them delicious!

You can make the filling for your peppers in advance too! To make the filling, start by browning your ground beef. Breaking up your ground beef into small pieces will also help you be able to stuff the peppers more easily.

Once your beef is cooked, add the green onions and seasonings. Saute for 1-2 minutes to help soften the green onions. Then, add the tomato sauce and cooked quinoa and stir until everything is evenly incorporated.

Using a spoon, scoop the filling into each pepper. Once filled, place your bell peppers into the air crisper basket of your Ninja Foodi or air fryer.

Set your Foodi to ‘air crisp’ at 355 degrees Fahrenheit for 8 minutes.

Sprinkle each pepper with cheddar cheese, and air crisp at 355 degrees Fahrenheit for another 5 minutes. Serve immediately for best results, and enjoy!

Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 pound ground beef
  • 2 green onions thinly sliced
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon chili powder
  • 1/4 cup tomato sauce
  • 1/2 cup cooked quinoa
  • 2 bell peppers (any color) tops cut off and seeds removed
  • 2 tablespoons shredded cheddar cheese

Instructions

  • Heat vegetable oil in a medium skillet over medium heat. Add ground beef and brown until cooked through, about 3-5 minutes. Drain any excess grease and return beef to pan.
  • Add green onions, garlic salt, ground cumin, paprika, and chili powder to beef and saute for 1-2 minutes.
  • Add tomato sauce and quinoa to skillet and stir until everything is evenly incorporated. Remove from heat.
  • Fill each of the peppers with the beef quinoa mixture and place filled peppers into the air crisper basket of your Ninja Foodi.
  • Set Foodi to 'air crisp' at 355 degrees Fahrenheit for 8 minutes.
  • Sprinkle cheddar cheese over peppers and air crisp at 355 degrees Fahrenheit for another 5 minutes, or until cheese is melted and golden brown.
  • Remove peppers from Foodi and serve immediately for best results.

Notes

  • Store any leftovers in an airtight glass container in the refrigerator for up to 3-5 days.
  • Safety first! I love using my silicone oven mitts and tongs to keep myself safe while cooking with my Ninja Foodi.
  • To cook your quinoa: use 1/4 cup dry quinoa and 1/2 cup water to make 1/2 cup cooked quinoa. Bring quinoa and water up to a boil on the stove, cover, reduce heat to low, and simmer for 15-20 minutes. The quinoa is done when you see little "squiggles" in the quinoa.
