Black Bean Burrito Bowl w/ Cilantro Lime Rice

If I haven’t said it enough already, grain bowls are my favorite. They’re quick and easy, delicious, versatile, and a whole meal all in one bowl. What’s not to love? Plus, my Black Bean Burrito Bowl w/ Cilantro Lime Rice is vegetarian, vegan (without cheese and sour cream), plant-based, and high in fiber.

The rice takes the longest to cook, so it’s a good thing to get that started first. Bring your brown rice and 2 cups of water up to a boil on the stove. Then, reduce heat to low, cover, and simmer for about 45 minutes or until the rice is tender and all the water has been absorbed. Once your rice is cooked, fluff it with a fork and stir in the lime juice and fresh cilantro.

You’ll want to make sure to fluff the rice well so that it doesn’t clump.

While your rice is cooking, heat one tablespoon of olive oil in a skillet over medium-high heat. Add chopped purple onion and saute for 3-5 minutes or until onion is translucent. Then, add garlic and saute for another 30 seconds or until fragrant. Finally, add the ground cumin, chili powder, ground black pepper, cayenne pepper, and black beans and saute for 3-5 minutes or until beans are heated through.

While you’re waiting for your rice and beans to finish cooking, chop up the rest of your veggies.

After that, all you have to do is get your garnishes ready. You can top your burrito bowl with whatever you like! I generally add some shredded cheddar cheese, sour cream, extra fresh cilantro, and hot sauce.

Then, all you have left to do is build your bowl! Layer individual bowls with the cilantro lime rice, black beans, bell peppers, Roma tomatoes, and lettuce. Top with whichever garnishes you wish, and enjoy!

Ingredients

For the cilantro lime rice

  • 1 cup brown rice
  • 1 lime juiced
  • 1/4 cup fresh cilantro finely chopped

For the black beans

  • 1 tbsp olive oil
  • 1 medium purple onion diced
  • 4 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp ground black pepper
  • 1/4 tsp cayenne pepper
  • 1 (15 oz) can black beans drained and rinsed

For the rest of the bowl

  • 1 bell pepper (yellow, red, or orange) chopped
  • 2 Roma tomatoes chopped
  • 2 cups Romaine lettuce chopped

Garnishes (optional)

  • 1 cup cheddar cheese shredded
  • 1/2 cup sour cream
  • fresh cilantro chopped
  • hot sauce

Instructions

  • Bring brown rice and 2 cups of water up to a boil.  Then reduce heat to low, cover, and simmer for about 45 minutes or until rice is tender and all the water has been absorbed.  Once rice is cooked, stir in lime juice and fresh cilantro.
  • Heat olive oil in a skillet over medium-high heat.  Add purple onion and saute for 3-5 minutes, or until onion is translucent.
  • Add garlic and saute until fragrant, or about another 30 seconds.
  • Add seasonings and black beans and saute for about 3-5 minutes, or until beans are heated through.
  • To build the bowl: start with a bed of cilantro lime rice, add black beans, bell pepper, roma tomatoes, and lettuce.  Top with garnishes, if desired.

Notes

  • To save time, you can cook the brown rice ahead of time, or use instant rice.
