As a non-morning person myself, I experience that on the regular. This is why overnight oats are such a staple for me. You just throw them together the night before when you actually have the mental capacity to do so, and then don’t have to worry about any prep work in the morning! And these blueberry coconut overnight oats have the right balance of sweet freshness to give you that immediate boost of energy, plus the fiber and protein to keep you going strong all morning long.

The best part of it all might just be how easy it is to throw this together. All you need is a mason jar and you just dump everything in, refrigerate and go. Personally, I like to leave the coconut and blueberries out until the morning because the coconut can get kind of soggy when it sits overnight, but it’s totally up to you and what you want to do!
Refrigerate overnight or for at least 8 hours. You can even prep a few jars at a time, though personally I like my oats with a bit more texture so I tend to do them one at a time. Again though, it’s totally up to you and what’s easiest and most preferable for you. In the morning, all you have to do is top your oats with the coconut and blueberry and eat!

Blueberry Coconut Overnight Oats
Ingredients
- 1 cup milk of choice (I typically use soy)
- 1/2 cup rolled oats
- 1 tbsp chia seeds
- 1 tbsp honey
- 1/4 cup unsweetened shredded coconut
- 1/4 cup blueberries
Instructions
- Add all ingredients except for coconut and blueberries to a mason jar. Stir well, cover, and refrigerate for at least 8 hours.
- Gently mix in coconut and blueberries and enjoy!
Notes
- Substitute honey for agave nectar or your other favorite liquid sweetener, if desired.
- You can use frozen or fresh blueberries based on what you have on hand.
