It’s been a cooler week–you can tell that summer is starting to wind down. In honor of the slightly cooler weather, I made my turkey chili recipe for supper on Monday! One of my favorite things about fall and winter is that it’s soups, stews, and chili season. It makes it so easy to break the crockpot out and throw together an easy, delicious meal.
I fell down a bit of a Pinterest hole last week, so we had a couple new recipes to try out! On Tuesday, we tried this honey garlic chicken sheet pan meal with broccoli and baby red potatoes. The honey garlic sauce was amazing!
Wednesday was a bit of a hodgepodge supper night. The sweetcorn in our garden is finally ripe, so we need to start eating a lot of corn. We were feeling salmon though, so we ended up with corn, salmon, and a wild rice pilaf. I can’t say corn is my first idea of a vegetable to pair with salmon, but it was all very tasty anyway. :P
On Thursday, we tried this chicken curry with cauliflower and sweet potatoes recipe from Abbey’s Kitchen. It was an incredibly flavorful dish, but was extremely labor-intensive so I don’t think this will turn into one of our regulars. It’s one of those meals you only really want to make when you have a few hours to spend in the kitchen. Despite being time-consuming, however, it was definitely worth the effort in taste!
Friday afternoon, we drove up north for the weekend! My uncle owns property in northern Minnesota by Big Fork. We used to go up every year when I was a kid, but once I was in college it was harder for me to find time to go. It was definitely a treat to be able to go back and spend a weekend out in the wilderness again. My highlight of the weekend was kayaking in the lake. We got to see water lilies up close, and even got pretty close to a couple of swans! There isn’t much for cell reception up there either, so it was a good opportunity to unplug and just enjoy the outdoors for a couple days.
I’ll leave you with a silly Maggie story from this week since it was National Dog Day yesterday and everything. Now, Maggie has never, in her 10.5 years of life, paid any attention to the TV. We watched the comedian, Demetri Martin, last week, and for some reason Maggie was absolutely enamored with the TV! It was probably just a fluke thing, but I’m going to pretend that Maggie’s a huge fan of Demetri Martin. :P Until next week!
