This spicy crockpot black bean chicken chili is loaded with veggies and all that chili goodness with the convenience of crockpot cooking.
Jump to RecipeSoup and chili season is in full swing! With the daylight hours getting shorter and shorter, I break out my crockpot more often. Because who wants to spend those precious few daytime hours cooking, am I right?!
To prep this recipe, all you have to do is dice your yellow onion, finely chop your bell pepper and celery, and mince your garlic.
Add everything to the crockpot except for the jalapeno pepper and stir well to combine. Cook on low for 6-8 hours, or on high for 3-4 hours.
Once your cook time is up, remove the chicken, shred, and return to your crockpot.
Garnish your chicken chili with sliced jalapeno pepper. Top with sour cream, cheese, or sliced avocado, if desired. Enjoy!

Crockpot Black Bean Chicken Chili
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 (28 oz) can crushed tomatoes
- 2 (15 oz) cans black beans drained and rinsed
- 1 (15 oz) can whole kernel corn drained and rinsed
- 1 cup chicken broth
- 1 medium yellow onion diced
- 1 bell pepper (any color) finely chopped
- 2 stalks celery finely chopped
- 3 cloves garlic minced
- 2 tbsp chili powder
- 1 tsp cayenne pepper
- 1/2 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp ground black pepper
- 1 jalapeno pepper sliced to garnish (optional)
Instructions
- Add all ingredients to crockpot except jalapeno pepper and stir.
- Cook on low 6-8 hours, or on high for 3-4 hours.
- Once cook time is up, remove chicken from crockpot, shred, and return.
- Garnish with sliced jalapeno pepper if desired.
Notes
- 1.5 cups of frozen corn can be used instead of canned, if desired.
- Try garnishing with sour cream, cheese, or sliced avocado.
