Crushing a Chili Competition + Long Walks – A Week in the Life

I started last week off by making my crockpot turkey chili recipe.  I’ve been working on this recipe for quite a while now, and thought it was time to get it on the blog!  Unfortunately for me, putting a recipe on the blog is not exactly the same as making a regular blog post so it took me some time to figure everything out.  One exciting thing I figured out is how to enable ratings for my recipes! Now, if you try one of the recipes I post you can leave a star-rating in the comments.  As soon as I think I have everything with blogging somewhat figured out, I have to learn something new again! :P

My dad’s work had a chili competition on Tuesday, so I thought it would be a perfect opportunity to put my crockpot turkey chili to the test!  It ended up placing third, but the really exciting part for me is that there were no leftovers. You know a recipe is good when there’s nothing leftover. ;)

On Wednesday, we had haddock for supper!  I’ve been having a real moment with haddock lately.  It’s one of the few fish that doesn’t taste like fish.  I can’t stand fishy-tasting fish (you know what I mean, right?), so haddock has a special place in my heart.  We added some lemon to the haddock for flavor, and paired it with brown rice and roasted green beans and cherry tomatoes.  I think we added a little bit too much lemon (oops!), but otherwise the dish was delish!

Now that I’ve actually figured out how to post recipes, I have to come up with new ones!  On Thursday, I started working on a turkey barley soup recipe. I absolutely love the texture of barley, and it holds up really well leftover (unlike noodles…).  For a first attempt, it turned out really well! And I loved enjoying the leftovers for the rest of the week.

The end of the week brought unseasonably warm, sunshiney, glorious days.  Maggie and I took advantage and went on very long walks.  Winter is always just around the corner in Minnesota once it’s October, so we need to get out on the nice days while we still can! It’s always so refreshing to be out in the crisp fall air, and the leaves changing colors is always gorgeous.  Plus, Maggie decided to actually pose nicely for a picture which I always appreciate. :P

I spent some of my weekend living vicariously through the social media posts of all the dietitians at the Food and Nutrition Conference and Expo (FNCE)–wish I could be there!  For those who don’t know, FNCE is basically like the nutrition equivalent of the Super Bowl. I went last year when it was in Chicago and had a blast (check out my FNCE 2017 Recap)!  Unfortunately though, since I’m in the process of trying to find a job I wasn’t able to travel to Washington D.C., where it’s being held this year. There’s always next year though! And though it’s not quite the same, it’s still fun to see all the pictures and posts from my dietitian friends at FNCE. :)
