Everything smells AMAZING while you’re prepping it, and the fun combo of textures and flavors makes this salad perfect for those who aren’t as fond of more conventional salads. It’s easy to throw together, and keeps well leftover so you can eat it throughout the week!

Gorgeous, right?! The first thing you’ll need to do to make this salad is gently toss the cucumber, blueberries, and mint in a large mixing bowl. Be careful when mixing not to smush the blueberries.
Then, in a small bowl, whisk together the olive oil, lime juice, rice vinegar, ground black pepper, and salt to make a dressing.
Drizzle the dressing over your cucumber blueberry mixture and toss to coat. Sprinkle with feta cheese, if desired, and serve!

Cucumber Blueberry Salad
Ingredients
- 1 cucumber sliced in half lengthwise and thinly sliced
- 1 cup fresh blueberries
- 1/4 cup fresh mint finely chopped
- 2 tablespoons olive oil
- 1/2 lime juiced
- 1 teaspoon rice vinegar
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon salt
- 1/2 cup crumbled feta cheese
Instructions
- In a large bowl, toss the cucumber, blueberries, and fresh mint.
- In a small bowl, whisk together the olive oil, lime juice, rice vinegar, ground black pepper, and salt to make a dressing.
- Drizzle dressing over cucumber blueberry mixture and toss to coat. Sprinkle with feta cheese, if desired, and serve.
Notes
- Store any leftovers in an airtight glass container in the refrigerator for up to 3-5 days.
- If using bottled lime juice instead of fresh, use about 1.5 tablespoons.
