Garlic Parmesan Smashed Potatoes

If you’ve never tried smashed potatoes before, you’re missing out! These smashed potatoes add garlic, parmesan, and butter into the mix for a delicious side dish.

I’m all about easy sides that still taste amazing and add a little something extra to a meal. Smashed potatoes have become extremely popular lately, and honestly? I’m on board for basically any preparation method if potatoes are involved. I love potatoes so much that I wrote a blog post about them. :P

To get this dish started, preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with foil or parchment paper for easier clean up. After thoroughly cleaning your potatoes, spread them evenly onto your prepared baking sheet and roast for about 20 minutes. Make sure that each potato has a few holes poked into them, you can easily do this with a fork.

While your potatoes are roasting, mince your garlic and melt your butter. Mix together the melted butter, minced garlic, and grated Parmesan. Smash each potato with a fork and drizzle the butter mixture over each potato. Roast potatoes for an additional 10 minutes, or until tender.

Ingredients

  • 1 lb baby yellow potatoes
  • 6 cloves garlic minced
  • 2 tbsp salted butter
  • 1/4 cup Parmesan cheese grated

Instructions

  • Preheat oven to 400 degrees Fahrenheit, and line a baking sheet with foil or parchment paper.
  • Spread baby potatoes evenly onto baking sheet and roast for 20 minutes.
  • Melt butter, and mix with garlic and Parmesan cheese.
  • Smash each potato with a fork, and drizzle butter mixture evenly overtop each potato.
  • Roast for an additional 10 minutes, or until potatoes are tender.

Notes

  • Fingerling potatoes, baby red potatoes, or other small potatoes can be used instead of baby yellow, if desired.
  • Make prep even easier by using pre-minced, jarred garlic.
  • Season potatoes with salt and pepper to taste, if desired.
