Overnight oats are one of my favorite breakfasts. They’re super easy to throw together and can be customized however you want. Plus, it forces you to prep your breakfast the night before which is helpful for people like me who are not friends of the morning. :P With summertime being peach season, I got the idea to combine the flavor of ginger and peaches in my overnight oats. And WOW is it a good combo.

If you’re unfamiliar with overnight oats, let me fill you in on this popular trend. Basically, overnight oats combine oats (who knew?!) with a milk beverage and generally other assorted mix-ins. You mix it together, refrigerate overnight, and enjoy them cold in the morning. Technically, you can heat them up if you like your oats warm, but because they’ve been soaking all night they might be mushier than you’re used to.

For this recipe, I added everything but the peaches to a mason jar, stirred it well and put it in the fridge until the morning. Then, I added my peaches. Now, you could add the peaches before refrigerating if you want, but I wanted to make sure they didn’t get too soggy because I’m a texture fan. :P

Add your peaches to your oats in small handfuls, mixing in between. Trust me, it may seem like a lot of peach for one jar, but it is SO WORTH IT.

Ingredients

  • 1 cup milk of choice (I typically use soy)
  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 1 tbsp honey
  • 1/2 tbsp fresh ginger root grated
  • 1 peach cut into ~1 inch chunks

Instructions

  • Add all ingredients except for peach into a mason jar.  Stir well, cover, and refrigerate for at least 8 hours.
  • Gently mix in peaches and enjoy!

Notes

  • I like slightly runny overnight oats and wrote this recipe accordingly.  If you like thicker overnight oats use about 3/4 cup milk instead of a full cup.
  • Chia seeds are technically optional, but they add fiber and help absorb some liquid.  If omitting, use less milk.
