This fresh and easy guacamole recipe only needs one ripe avocado, though you can scale it up if you’re lucky enough to have more than one ripe avocado at one time.
Jump to RecipeThis recipe is for all those unfortunate times when you only ever have one avocado ripe at one time. It can also easily be scaled up if you have the great fortune of multiple ripe avocados.
To start things off, dice your purple onion and Roma tomato, seed and dice your jalapeno pepper, mince your garlic, and finely chop your cilantro. Then, cut your avocado in half, remove the pit, and scoop the flesh away from the skin with a spoon.
Place your avocado, lime juice, and spices into a bowl and mash until smooth. You can mash with a fork or potato masher. You’ll definitely need a ripe avocado for this recipe! Once smooth, fold in your onion, tomato, jalapeno pepper, garlic, and cilantro.
To prevent browning, make sure to keep your avocado covered in an airtight dish until you’re ready to serve it. Enjoy with tortilla chips, on tacos, in a burrito, with carrot sticks, or your favorite guacamole sidekick! If you try this recipe, please be sure to give it a rating down in the comment section.
