It’s been a smokey week in Minnesota, thanks to the wildfires in Canada right now. The weirdest thing has been how hazy everything is, and no sunshine. The humidity is still high though, so we get all the heat without the sun. I’m hoping the smoke clears soon! There’s something just a little unnerving about it being the exact same brightness outside all day long. I guess it’s a good thing I spend most of my time studying indoors anyway. :P
Monday night, I made Lindsey from Nutrition to Fit’s vegetable herb quinoa pilaf with turmeric roasted chickpeas again. It’s quickly become one of my favorite summer suppers to make. This time, I added some leftover mushrooms we had to it as well. Still delicious!
On Tuesday, we made grilled flatbread pizzas again. You really can’t go wrong with fresh mozzarella, basil, oregano, and tomato. It was perfect alongside some fresh berries.
Wednesday’s supper was a yummy creamy chicken and orzo dish. We used rotisserie chicken and peas and carrots for the veggies.
Thursday night was stir-fry night! We have an outdoor wok that makes summer stir-fry extra convenient. Chicken, broccoli, carrots, pea pods, green onion, and noodle nests rounded out this dish.
On Friday, Spencer and I tried our hand at baked mac and cheese. We have a few modifications we’ll have to make to it before it’s just right, however. We spent the rest of the weekend relaxing, making chocolate chip cookies, and walking with Mags. I even made Maggie some more spent grain dog biscuits. Can’t leave her out!
