Job Hunting – A Week in the Life

Happy Monday!  Fall is definitely in the air–my evening walks with Mags are cool enough where I have to bring a sweatshirt.  It’s a bittersweet transition for me from summer to fall. I love summer and the sunshine, but I also love cooler evening walks and the leaves changing colors.  It looks like we’ll have some warmer temps this week though, so summer is not quite over yet! Since passing my RD Exam, I’ve transitioned from studying all day to searching for jobs all day.  It’s a process, but I’m excited to begin my career as a Registered Dietitian Nutritionist! In the meantime, I’m still cooking up tasty dishes in addition to launching my professional social media pages (more on this in last week’s post).  

My celebratory “I’m an RDN!” Benihana dinner celebration took the place of one of our scheduled meal ideas, so we moved it to last Tuesday.  We had one of my faves: shrimp stir-fry! Honestly, a week shouldn’t go by without stir-fry in my life. It’s just too good!

On Wednesday, my brother, Zach, took professional photos of me!  It was really fun to walk around taking cool pictures with him, and I’m very pleased with how most of them turned out.  It was also really nice to have options to pick from for my professional social media profile pictures. For supper that night, we had turkey lettuce wraps inspired by PF Chang’s!  We also had plenty of leftovers that we ended up eating over the weekend as a quick and easy lunch.

Thursday, I tried this phenomenal balsamic chicken and veggies recipe from fellow RDNs Stacie and Jessica of The Real Food Dietitians.  It’s such an easy, quick supper that’s loaded with veggies (a win-win for me).

On Saturday, I went to visit my grandparents for the day.  I haven’t been able to see them for quite a few months, so it was really nice to catch up.  Sunday was a more relaxed day of getting things organized for the week. We also made these yummy, and very easy breakfast burritos.  They were very filling and hit the spot!
