This particular recipe we actually tested out together over on the Hookom on Health Twitch stream for the first time. It was over there that I remembered lemon juice will curdle cow’s milk… Hence my little note at the bottom of this recipe to maybe use a plant-based milk for this recipe instead. :P Unless you like that kind of texture, in which case, no shame, you do you!
My latest overnight oats recipe combines zesty lemon juice with my standard overnight oats recipe. It brings a bright burst of flavor to your morning and is sure to help wake you up and fuel your day!
The best part of this recipe is that it literally only takes like 3 minutes to throw together! Just add all of your ingredients to a mason jar and stir it up well. So simple!
Cover your mason jar tightly, and leave in the fridge overnight. In the morning, give it another good stir, and enjoy!

Lemon Overnight Oats
Ingredients
- 1 cup milk of choice (I typically use soy)
- 1/2 cup rolled oats
- 1/2 lemon juiced
- 1 tbsp chia seeds
- 1 tbsp honey
Instructions
- Add all ingredients to a mason jar. Stir well, cover, and refrigerate for at least 8 hours.
- Stir well and enjoy!
Notes
- Lemon juice causes cow's milk to curdle, so I would not recommend using dairy milk in this recipe. Any plant-based milk will work well.
- Chia seeds are technically optional in this recipe. If you omit them, use a little less milk.
