Welcome back! The weeks just keep getting busier, and I don’t foresee it stopping until after the holidays… Even then, maybe my weeks will still be crazy! :P I started off Monday with a bang with two in-person interviews. They were several hours apart, unfortunately, but were both south of where I’m currently living so I stayed out until both were done. It ended up being a long day, but that’s okay!
On Tuesday, I put the finishing touches on my lentil and vegetable skillet recipe. The last step for me is taking pictures while I’m prepping and then getting everything into a blog post. It’ll be live next week, so watch out for that!
On Wednesday, Spencer started to teach me the basics of video editing. I’m still utterly confused at some of the concepts, but it’s a work in progress! We managed to finish editing and uploading my Chickpea Noodle Soup Recipe Video during this learning session. We kept the skillet meals going (and the meatless ones too) with an orzo vegetable skillet for supper!
On Thursday, I participated in a webinar on digestive health. If you’re curious about all the webinars I watch, go follow me on Instagram! I post highlights of webinars in my Instagram stories, and answer any further questions people have about that topic. Later that afternoon, I had a phone interview. Then, I tested out my newest recipe–a white bean chicken chili. Honestly, I usually have to test recipes at least twice before getting them the way I want them. More often, I’m testing a recipe three or four times. This one, though, turned out very good the first try which is always exciting!
Friday was full of a lot of random errands, and pizza for supper at Broadway. I had a pretty relaxed weekend which was much needed after all the random things going on during the week. Until next week!
