Outdoor Music + Good Eats – A Week in the Life

Before we launch into my recap of last week, a quick study update: I’m still studying. :P  I know some of you are more curious about this than others, but it really isn’t that interesting.  It’ll happen at some point in the not-too-distant future, and I promise I’ll let you know when I pass.  

On Monday, I was feeling a bit nostalgic for my SNAC days in undergrad.  For those who don’t know, I was part of a student nutrition group called SNAC for a couple of years at the University of Minnesota-Twin Cities.  We taught cooking classes, did grocery store tours, nutrition counseling, and presentations around campus among other things. In honor of my days in SNAC (and meatless Monday), I made our Thai Buddha Bowl recipe.  I finally figured out how to get the tofu more crispy, and was really craving the peanut sauce–so good!  It’s also really easy to make without sacrificing great flavor which is the ultimate combo.

Sometimes it’s easiest to plan meals for the week around theme days which is how we ended up with tacos for supper on Tuesday.  Plus, we had some roma tomatoes to use up so it was a win-win all around.

On Wednesday, we tried out a Greek Gyro Skillet recipe with chicken.  I always get skeptical when gyro is in the title of any recipe because I’m not a huge fan of gyro meat, but this recipe was delicious!  The only thing I’d change is maybe having less rice, and finding a way to make it without having to keep setting things aside when they’re cooked…  In my opinion, the main perk of a skillet recipe is not having a lot of dirty dishes to clean up at the end. This recipe, however, tells you repeatedly to cook something and then put it in a bowl on the side to add back in later.  So, very yummy, but way too many dirty dishes! It does photograph well though.

Thursday night, we went downtown for music in the park.  Unfortunately for me though, I didn’t leave that evening unscathed.  We were biking there when I hit a pile of sand with my bike and ended up falling off for the first time since childhood.  I think I got a bit too overconfident with my bike’s ability to manage sand… Other than a scraped elbow and some road rash I made it out with only a bruised ego. :P  The music was really good though, and we managed to snag a table on the patio of a restaurant right near the park. Outdoor dinner and music made the evening wonderful, despite a wincing elbow.

On Friday, we tried another new chicken recipe this time with lemon, baby red potatoes, and green beans.  While I loved the main ingredients, it was really lacking in flavor. If we ever make this one again, we’ll have to find some ways to season it better.

My weekend was very relaxed this week.  I did more studying, grocery shopping, and as always, evening walks with Maggie.  It was nice to have a calmer weekend to recoup. What were your highlights of last week?  Any recipes you tried that you loved? I’m always looking for new recipes to try out!
