I’m back with another tasty, simple energy ball recipe! These peanut butter chocolate chip energy balls are the perfect grab-and-go snack or breakfast on-the-run. They’re full of plant-based protein, healthy fats, fiber, and whole grains.

All you need is rolled oats, peanut butter, mini chocolate chips, honey, and chia seeds. Throw all your ingredients in a bowl, and thoroughly mix.

Once everything is combined, roll, roll, roll! Roll your dough into about 1 inch balls and store in the refrigerator for up to 1 week.

Ingredients

  • 1 cup rolled oats
  • 1/3 cup peanut butter
  • 1/4 cup mini chocolate chips
  • 2 tbsp honey
  • 2 tbsp chia seeds

Instructions

  • Add all ingredients to a bowl, and stir to combine.
  • Roll dough into approximately 1 inch balls.
  • Store balls in refrigerator.

Notes

  • Energy balls can be stored in the refrigerator for up to 1 week, or frozen for up to 3 months.
  • Energy balls can be left at room temperature, if desired, but keep best and last longer when refrigerated.
  • If the dough isn’t sticking together very well, warm it in your hands for a few seconds and it should soften up enough to form a ball.
