Rain, Rain, Go Away + Crockpot Cooking – A Week in the Life

After nearly two weeks of rain with zero sunshine we finally got a glimpse of the sun on Thursday!  While the cold seems to be here to stay, getting the sun back for a bit was very nice. As always, my one saving grace with the colder weather is soup!  I made minestrone soup in the crockpot for Monday night. I love all the veggies!

Tuesday was taco night!  While we don’t always meal plan based on “theme” days (meatless Monday, taco Tuesday, etc.), it definitely helps make the process easier for some weeks.  This week was turkey tacos which is one of my favorites!

On Wednesday, I had another webinar.  This one was about finances involved with having a private practice.  Since my long-term goal is to have my own private practice it was great to get some insight into the money side of things!  I also tried out a new crockpot recipe for honey garlic chicken and veggies. It was extremely tasty, and smelled amazing cooking all day!

Thursday morning, Tessa (my aunt and uncle’s dog) joined us again!  Maggie was thrilled to have a playmate for a few days, and they had a ton of fun.  She stayed with us until Saturday afternoon. Maggie’s been crashed ever since! :P  Thursday night we had shrimp stir-fry again!  I could probably eat stir-fry every day of the week and never get tired of it…

On Friday, Spencer and I made some chocolate chip cookies.  While I’m not the biggest fan of baking, cookies are worth it so I mustered up the patience for the afternoon.  For supper, we had cedar-plank salmon, wild rice pilaf, and grilled asparagus. It was a great meal to end the week on, especially with fresh chocolate chip cookies for dessert.

Both of my brothers had their birthdays this week, Zach on the 9th and Ben on the 11th.  Saturday night, my parents and I were able to meet Zach for supper to celebrate his birthday.  Ben couldn’t make it since he’s way up in Duluth at school right now. We went to Groveland Tap in Saint Paul.  They have some pretty great pub food, plus, as the name suggests, plenty of beer and hard cider on tap. Despite the temps being in the 40’s, we went to Izzy’s for ice cream after.  The place was packed which goes to show that it’s never too cold for Minnesotans to enjoy ice cream!
