Fresh herbs and a balsamic vinegar marinade give these chicken breasts a robust flavor.
Jump to RecipeI’m convinced that there is no greater food horror than boring chicken. Okay, I’m being a little dramatic, but still! Marinating chicken is a great way to give it some great flavor, plus it’s easy to do. Rosemary and thyme are classic chicken herbs, so I decided to pair them with some balsamic vinegar to give this chicken some real savory flavor.
You don’t even need a full spice rack to make this chicken taste great. For this recipe, the only chopping required is mincing the garlic and finely chopping the rosemary and thyme. Rosemary and thyme are some of the only fresh herbs where I don’t use the stem. It’s just too woody to chop up with everything else. So make sure to separate the leaves from the stem before chopping.
Once your herbs are chopped, whisk all of your marinade ingredients together. You want to make sure that everything is well mixed so that the marinade has a consistent flavor.
Then it’s time to marinate! You can marinate your chicken breasts in a silicone or plastic bag, or a shallow, covered dish. Just make sure that the chicken breasts are well covered with marinade. The longer they’re allowed to sit in the fridge marinating the better, but don’t exceed 48 hours!
Once your chicken breasts have been marinating for at least 2 hours, it’s time to get ready to cook them. Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with foil or parchment paper. Let the chicken bake for 20-30 minutes until it reaches an internal temperature of 165 degrees Fahrenheit.

Rosemary, Thyme, Balsamic Chicken Breasts
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1 1/2 tbsp balsamic vinegar
- 3 cloves garlic minced
- 2 tsp fresh rosemary finely chopped
- 2 tsp fresh thyme finely chopped
- 1/2 tsp salt
Instructions
- Whisk together olive oil, balsamic vinegar, garlic, rosemary, thyme, and salt until all ingredients are evenly dispersed.
- Marinate chicken breasts for at least 2 hours (overnight is best).
- Preheat oven to 400 degrees Fahrenheit, and line a baking sheet with foil or parchment paper.
- Place chicken breasts onto prepared baking sheet and spoon any extra marinade evenly over chicken.
- Bake for 20-30 minutes, or until chicken reaches an internal temperature of 165 degrees Fahrenheit.
Notes
- Dried thyme and rosemary may be used instead of fresh, use about 1/3 of the amount.
- Chicken thighs, tenders, etc. may be used instead of breasts, if desired.
