My week was jam-packed full of studying, baking dog biscuits, and eating amazing food. I started really buckling down with studying for the RD Exam this week. It’s made me feel both better and worse about the exam. I’m starting out my studying by briefly reviewing everything and going over some practice questions. Then, I’ll spend more time on my weaker areas so I’m not wasting time studying things I already know. Every time I find an area I know really well I feel great about the exam. However, when I get to a section I don’t know as well, obviously it makes me feel a lot less confident. I’m still hoping to take the exam sometime in August, depending on how well my studying continues to go. Luckily, there are quite a few testing centers near me, so I have some flexibility with where/when I take my exam. Don’t worry though, I’m still finding time for fun, stress-reducing activities and some incredible food.
I’ve been craving asparagus lately, so on Wednesday we had grilled chicken and asparagus with a brown rice lentil pilaf. We had some radishes in the fridge that weren’t going to last much longer, so I diced them up really fine and threw them in the pilaf too–you’d never know!
Wednesday night, we went to the Torchlight Parade in downtown Minneapolis for the Aquatennial. It was the perfect night for a parade–not too hot and not too cool.
It got rainy towards the end of the week, but that didn’t stop Maggie and I from walking! I baked her some spent grain dog biscuits on Thursday too using the grains from our brew day last Sunday. They’re one of her favorites!
On Friday, we went out for pizza at Pompeii in downtown Elk River. They make authentic, wood-fired, Neapolitan-style pizza with fresh ingredients. I had their Margherita pizza with a pear, walnut salad. After supper, we went to see “Jurassic World: Fallen Kingdom”. It was a good, though predictable movie.
Saturday was Anoka’s Food Truck Festival! They had over 40 food trucks parked in downtown Anoka–there was so much food to try! We had falafel, a sweet potato taco rice bowl, yucca fries, lobster tacos, cookie dough, and a funnel cake. It all tasted so good! That night, we went to the fireworks in downtown Minneapolis for the Aquatennial. They were the best I’ve ever seen–nonstop, breathtaking fireworks for a solid 20 minutes.
On Sunday, I had to add some late-addition hops to the brew we started a week ago. For supper, we had turkey burgers with arugula, radish, pickles, purple onion, and avocado, garden-fresh green beans, and homemade french fries. It was the perfect meal to cap off the weekend.
