My week was full of cool evening walks, studying, webinars, and delicious food. We had an unseasonably cool couple of days, but it looks like we’re in for another hot week! It’s hard to believe it’s already August! The summer has been flying by. It feels weird that this is the first year that I don’t have a “back to school” coming up. Just taking this test and finding a job–all in good time! Now, on to my week.
Monday, I tried my hand at crafting a black bean burrito bowl recipe. I even made some fresh guacamole to go with it–so good!
On Tuesday, I participated in my first webinar of the week. It was about meal planning for complex clients. They discussed how to use technology to help streamline meal planning. It was interesting and very helpful since meal planning can take a lot of time. We had another great supper, this time of salmon, wild rice pilaf, asparagus and brussels sprouts.
Wednesday was stir-fry night! Stir-fry is probably one of my favorite foods–I love all the veggies! My ultimate favorite is stir-fry with noodle nests. We fry up some Ramen noodles into “nests” to put the stir-fry on. It adds nice crispy texture to the dish.
Thursday was my second webinar of the week. This one was about making time for social media and how to target your audience effectively. It was great to get some pointers, especially since I’m just starting out in the nutrition social media realm.
On Friday, we tried out grilled flatbread pizzas. Fresh mozzarella, spinach, roma tomatoes, and fresh basil really made them amazing! Perfect for a summer night. That night, my mom and I took Maggie for a walk. Halfway through it started pouring, so we ended up having a pretty soggy walk home.
We had a pretty relaxed weekend. It was rainy on and off so we spent some time shopping. I found some nice business-attire that I’m pretty excited about. Consignment shops are the best! And that was my week–what were some of your highlights of last week?
