Studying + Wisconsin Weekend – A Week in the Life

It’s been a crazy week full of studying!  This will be a shorter post–I’ve got a larger update post coming on Thursday, so look out for that.  Change is incoming! All right, let’s launch into my week.

I fell down another Pinterest hole last week which resulted in a couple new recipes to try out!  On Tuesday, I made this really easy, delicious white bean summer stew.  I love recipes like this that use a lot of the garden-grown summer veggies.  It’s a great way to get a whole bunch of veggies in, plus tons of fiber!

Wednesday night, we tried this lemon parmesan chicken and asparagus recipe (also found on my Pinterest adventure).  Parmesan chicken is one of my favorite foods, and this recipe did not disappoint!  Plus, you bake everything on one pan which makes cleanup much easier.

Thursday night, Maggie, Spencer, and I drove to Wisconsin to visit Spencer’s family for the weekend.  It was Maggie’s first time out there to meet Spencer’s family, his parent’s dog, and his sister’s dog.  Needless to say, things were a little crazy at times, but overall went well. I think she’s happy to be home now though!  :P
