All you need to do before cooking is prep your vegetables. Dice your onion, mince your garlic, chop your sweet potato into about 1 inch cubes, and chop your fresh parsley. You can peel your sweet potato if you’d like, though the nutrient content is higher if you keep the peel on.
Then, it’s time to get cooking! Heat a tablespoon of olive oil in a skillet over medium-high heat. Once heated, add the ground turkey and brown until cooked through, or about 6-8 minutes.
Then, add in your diced yellow onion and saute for another 2-3 minutes, or until onion is translucent. Next, add your garlic and saute for another 30 seconds, or until fragrant.
Then, add in your cubed sweet potato and continue sauteing for about 10 minutes. The sweet potato is cooked through when it can be easily pierced with a fork.
Finally, add in the ground cumin, smoked paprika, and cayenne pepper. Stir well to evenly season the dish. Then, sprinkle the mozzarella cheese over-top and remove from heat once cheese is melted. Garnish with fresh parsley and serve!

Ingredients
- 1 tbsp olive oil
- 1 lb lean ground turkey
- 1 medium yellow onion diced
- 4 cloves garlic minced
- 1 large sweet potato cut into ~1 inch cubes
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 1/2 cup mozzarella cheese shredded
- 1/4 cup fresh parsley chopped
Instructions
- Heat olive oil in a skillet on the stove over medium-high heat. Add ground turkey and brown until cooked through, about 6-8 minutes.
- Add onions and saute for about 2-3 minutes, or until onions are translucent.
- Add garlic and saute until fragrant, about 30 seconds.
- Add sweet potato and saute until tender and can be easily pierced with a fork, about 10 minutes.
- Add ground cumin, smoked paprika, and cayenne pepper and stir to combine.
- Sprinkle mozzarella cheese on top, remove from heat once melted. Garnish with fresh parsley and serve.
