It’s officially fall! I was fortunate enough to get to welcome in fall with a friend’s wedding, more dog sitting, and some continuing education. Fall also means it’s soup season! Monday night, I made my black bean, lentil, and vegetable soup. I love packing as many vegetables into it as possible–so warm and delicious! Plus, it’s a perfect “Meatless Monday” dish.
Tuesday was another meatless meal of cauliflower fajitas. I even made some fresh guacamole to top them with. It was another delicious meal, though I think next time we’ll need to add a little more protein…
Wednesday’s supper was a fantastic ground turkey, sweet potato skillet topped with fresh parsley and mozzarella cheese. It was a perfect beginning of fall meal.
On Thursday, I had two webinars to watch! The first was about publishing, which is something I’ve always been interested in. It was really nice to get more information about it–it’s definitely not something I’d be able to do for quite a while, but nice to know about. The second one was about fiber and how nationwide we’re continuing to not get enough in our diets. It really highlights the importance of continuing to educate on fiber and encourage fruit, vegetable, and whole grain intake! Ironically, we decided to make cedar plank salmon on the grill for supper. This is the second time in about a month that we’ve grilled on a night when it starts POURING rain. We had the grill pulled up as close to the house as possible, but even so it was a wet affair. Alongside the salmon, we had a seven grain rice mix and a side salad.
You may remember from last week’s post, but I was dog sitting my aunt and uncle’s dog Tessa last week. She went back home Monday night, and then came back Friday night for the weekend. Maggie was thrilled to spend more time with her cousin!
On Saturday, Spencer and I went to my good friend from high school, Autumn’s, wedding. It was so nice to see her and her now husband, Mack, again since they moved out to California about a year ago (the wedding was in Minnesota). I also got to reconnect with some other friends from high school and catch up with what everyone’s been up to! Overall, it was a fantastic weekend and a great way to welcome in the fall season.
