Asparagus, Chicken, Sweet Potato Skillet

This simple asparagus, chicken, sweet potato skillet is a breeze to cook for a nutritious and low-stress meal.

It’s no secret that I’m a huge fan of skillet meals, and this one is no different!  With less than 10 ingredients, and a quick prep time this recipe is ideal for those nights when you don’t really feel like cooking.  Because who says eating well has to be time-consuming and complicated?

To get this recipe started, cut up your chicken breasts into bite-sized pieces.  Then, chop your veggies too so they’re ready to go!  To make the sweet potato easier to cut up, cut some slits into it and microwave it for about a minute.  Be careful though, it will get hot!  Trim the ends off your asparagus and discard, then chop the asparagus into about 1″ pieces.  Don’t forget to mince your garlic!

Now it’s time to cook!  Heat your vegetable oil in a large skillet over medium-high heat.  Add your garlic, and saute until fragrant, or about 30 seconds.  Then, add the chicken and saute for about 5-7 minutes, or until the chicken is no longer pink.

Add your sweet potato and saute until tender and can be easily pierced with a fork, about 10-15 minutes.  Keep in mind that if you microwave your sweet potato to make it easier to cut that it will become tender in the skillet more quickly.

Once the sweet potato is tender, add the asparagus and saute until tender.  Just like with the sweet potato, test it with a fork to be sure it’s tender.  This should take about 4-5 minutes, depending on the thickness of the asparagus.  Finally, add the paprika, dried oregano, and ground black pepper and mix well.  Remove your asparagus, chicken, and sweet potato skillet from heat, and enjoy!

Ingredients

  • 1 tbsp vegetable oil
  • 4 cloves garlic minced
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 large sweet potato chopped into ~1" pieces
  • 1 bunch asparagus (about 3 cups) chopped into ~1" pieces
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp ground black pepper

Instructions

  • Heat vegetable oil in a large skillet over medium-high heat. Add garlic and saute until fragrant, about 30 seconds.
  • Add chicken and saute for about 5-7 minutes, or until no longer pink.
  • Add sweet potato and saute until tender and can be easily pierced with a fork, about 10-15 minutes.
  • Add asparagus and saute until tender and can be easily pierced with a fork, about 4-5 minutes.
  • Add paprika, dried oregano, and ground black pepper and stir to combine. Remove from heat.

Notes

  • Cut slits into your sweet potato and microwave for about 1 minute to make it easier to chop up.  Note that your cook time in the skillet will be less as well since the sweet potato will be partially cooked by the microwaving process.
  • Store any leftovers in an airtight glass container for up to 3-5 days.
