Fresh and vibrant, chia lemonade is a simple and fun way to stay hydrated.
My favorite form of hydration is typically plain water (I know, how boring am I?), but lemonade has a special place in my heart too. This chia lemonade is extra fun to me because the chia seeds absorb some of the liquid and gelatinize slightly which results in an interesting texture change. I won’t lie, it’s probably not for everyone, but I enjoy it and figured someone else out there would too! :P

This lemonade is also super simple to throw together. All you need is lemon juice, water, chia seeds, and agave nectar (or another liquid sweetener of choice). Stir everything together in a mason jar and let it sit for 10-15 minutes, or until the chia seeds start to swell and gelatinize.

Chia Lemonade
Ingredients
- 1 lemon juiced
- 1 cup water
- 1 tbsp chia seeds
- 1 tbsp agave nectar
Instructions
- Add all ingredients to a mason jar or large drinking glass and stir well. Let sit for 10-15 minutes so the chia seeds can start to absorb some of the water and gelatinize. Enjoy chilled or with ice!
Notes
- The longer you let this lemonade sit, the softer the chia seeds will get. If you don't mind them being a little crunchy, feel free to start drinking right away!
- Try this recipe out with some lime juice instead of lemon.
- You can use bottled lemon juice instead of fresh, if desired. One lemon contains about 2 tbsp of juice.
- Feel free to substitute honey or your other favorite liquid sweetener instead of agave nectar.
