Roasted chickpeas make the perfect grab-and-go snack or topping for salads or grain bowls. They’re packed with protein and fiber and are vegan, plant-based, and gluten-free. And the best part for me is that they’re easy to throw together and only need a few ingredients for a tasty snack!
Whenever you roast chickpeas, it’s super important to pat them dry prior to popping them in the oven. If they’re too damp, they won’t roast properly! Toss them with olive oil, spread evenly onto a lined baking sheet and roast at 425 degrees Fahrenheit for 30-45 minutes or until golden-brown and crunchy. Stir every 15 minutes or so for even browning.
As soon as you pull the chickpeas out of the oven, while they’re still warm, toss with lime juice and chili powder to coat. Allow to cool before storing in an airtight container or silicone storage bag.

Chili Lime Roasted Chickpeas
Ingredients
- 1 (15 oz) can chickpeas drained, rinsed, and patted dry
- 1 tbsp olive oil
- 1 lime juiced
- 1/2 tbsp chili powder
Instructions
- Preheat oven to 425 degrees Fahrenheit and line a baking sheet with silicone baking mat, parchment paper, or foil.
- Toss chickpeas with olive oil and spread evenly onto prepared baking sheet and roast for about 30-45 minutes, or until chickpeas are golden-brown. Stir chickpeas every 15 minutes for even browning.
- Toss roasted chickpeas with lime juice and chili powder immediately after removing them from the oven.
Notes
- It’s important that your chickpeas are patted dry before tossing in olive oil and salt so that they roast properly.
- Store your roasted chickpeas in an airtight container for up to 1 week.
