Mango Peach Overnight Oats

Overnight oats will probably always be one of my favorite grab-and-go breakfasts.  I am 100% NOT a morning person (hello, fellow night owls!), and trying to wake up early enough to prep myself a breakfast is a losing battle.  I’m all about making goals that actually work for your life, hence why overnight oats and I have such a good relationship.  Expect me to wake up earlier to prep breakfast?  Never going to happen.  Spend a little time before bed prepping breakfast?  Now that I can do!

I also just love how easily transportable overnight oats are.  Sleep in a little late?  No problem, just grab your jar, bag of mix-ins, and a spoon and hit the road!

Plus, overnight oats have plenty of fiber in them which helps keep you satisfied for longer.  And you can add extra protein or healthy fats in your mix-ins, customizing your jar however you want!  The possibilities are literally endless!

I’m a big fan of bright, fresh-tasting breakfasts which is how these mango peach overnight oats were born.  The fresh, sweet flavor gives me that boost I need to power through my day!  Especially since mornings are tough for me to begin with because I’m awake, lol. :P

soy milk, rolled oats, chia seeds, honey, peach, mangoThe prep for overnight oats is pretty simple.  Just add your oats, milk, chia seeds, and honey to a mason jar.  Stir well, screw on the lid, and stick in the refrigerator overnight (or for at least 8 hours).

overnight oatsNow, here’s where you have a decision to make.  You can either chop up your peach and mango and store them in a container or storage bag overnight, or you can cut them up in the morning.  Personally, if I know I’m going to need to be up and out in the morning, I prep my fruit the night before.  It just saves me from having a really hectic morning.

peach and mangoWhen you’re ready to eat your oats, gently mix in your peaches and mango, and you’re done!  An easy, quick, delicious and nutritious breakfast just like that!

Mango Peach Overnight Oats

Ingredients

  • 1 cup milk of choice (I typically use soy)
  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 1 tbsp honey
  • 1/2 peach cut into ~1 inch chunks
  • 1/2 mango cut into ~1 inch chunks

Instructions

  • Add all ingredients except for mango and peach into a mason jar. Stir well, cover, and refrigerate for at least 8 hours.
  • Gently mix in mango and peaches and enjoy!

Notes

  • I like slightly runny overnight oats and wrote this recipe accordingly.  If you like thicker overnight oats use about 3/4 cup milk instead of a full cup.
  • Chia seeds are technically optional, but they add fiber and help absorb some liquid.  If omitting, use less milk.
