Making tortilla pizzas is a quick, easy way to get your pizza game on! There are so many possible combinations you can put on a pizza, but this one is an easy personal favorite! And with only six ingredients, it’s easy to throw together fast so you can get on with the rest of your life.
To start things off, I prefer to pre-bake my tortillas a little bit. This helps them get a little more crispy which is what I personally prefer. Lightly brush each tortilla with olive oil before popping them in the oven for a few minutes. Keep an eye on them though as they can go from golden brown to burnt really quickly!
While your crusts are baking, thinly slice your roma tomatoes and fresh mozzarella. You can use tomato sauce instead of fresh tomatoes, if you prefer. You can also use shredded mozzarella instead of fresh, though I personally think fresh adds a special touch. Once your crusts are golden brown, layer tomatoes, mozzarella, basil, and oregano onto each pizza. You can add your own favorite toppings as well.
Bake your tortilla pizzas for another 10 minutes, or until the cheese is melted and the edges of the tortilla are crispy. As you can tell from my pictures, I ended up over-baking mine just a little. Keep in mind how crispy or chewy you want your pizza to be and adjust your baking time accordingly.

Mediterranean Tortilla Pizzas
Ingredients
- 4 100% whole wheat tortillas
- 2 tsp olive oil
- 4 Roma tomatoes thinly sliced
- 1 (8 oz) ball fresh mozzarella cheese thinly sliced
- 2 tbsp fresh basil chopped
- 1/2 tsp dried oregano
Instructions
- Preheat oven to 400 degrees Fahrenheit. Line two baking sheets with foil or parchment paper.
- Lightly brush one side of each tortilla with olive oil. Place on baking sheet and bake for 3-5 minutes, or until the surface of each tortilla is slightly browned.
- Place an even layer of tomatoes, mozzarella, basil, and oregano onto each tortilla. Add any extra toppings, as desired.
- Bake pizzas for about 10 minutes, or until cheese is melted and the edges of each pizza are golden brown.
Notes
- Shredded mozzarella can be used in place of fresh mozzarella, if desired.
- Fresh oregano can be used instead of dried, if desired.
- Dried basil can be used in place of fresh, if desired.
- Place mozzarella cheese over fresh herbs to prevent them from getting scorched during baking.
