Refreshing and savory, this mint hummus is the perfect spread for a sandwich or wrap or accompaniment to your favorite dippable snack.
Hummus is one of my favorite sandwich spreads and dip for a variety of different snacks and mint is one of my favorite fresh herbs, so it seemed like a no-brainer to pair the two! Fresh mint makes this hummus so refreshing and gives it a bit of a summery vibe that goes so well on a sandwich or wrap. I also love dipping apple slices, pita chips, pretzels, or homemade naan into it for the perfect, satisfying snack.

For a smoother hummus, peel off the skins of the chickpeas and discard. I rarely do this because, personally, I don’t think the end result is worth the effort, but you do you! :) Then, put everything in your food processor and puree away!
Scrape the sides and continue pureeing until smooth.
Pair with your favorite sandwich or wrap for a yummy lunch, or dip pretzels, pita chips, or apple slices for a satisfying snack. Enjoy!

Mint Hummus
Ingredients
- 1 (15 oz) can chickpeas drained and rinsed
- 1 lemon juiced
- 2 tbsp fresh mint
- 1 tbsp tahini
- 1 tbsp olive oil
Instructions
- Combine all ingredients in a large food processor and blend until smooth, about 2 minutes. Scrape the sides of the food processor and blend for another minute.
- Spread on a sandwich or wrap, or serve with apple slices, pretzels, pita chips, etc!
Notes
- Store leftovers in an airtight glass container in the refrigerator for up to 5-7 days.
- If hummus is too thick for your liking, add a little more olive oil to thin it out.
- For a smoother hummus, remove the skins of the chickpeas prior to pureeing.
