Ninja Foodi Banana Bread

Crisp on the outside and moist on the inside, this banana bread has a hint of cinnamon and is easy to make in the Ninja Foodi.

Banana bread is a favorite in our household. It’s one of those nostalgic baked goods that I grew up eating, and the smell always transports me back to those lovely childhood memories. My favorite kind of banana bread is nice and crunchy on the outside and moist on the inside — something that can be easily achieved in the Ninja Foodi. This was such a fun recipe to test, and I hope you enjoy it as much as I do!

The first thing you’re going to want to do is preheat your Foodi. This is ESSENTIAL when baking in your Foodi, otherwise your baking will be inconsistent and things won’t rise like they’re supposed to. To do this, just set your Foodi to ‘bake’ at 325 degrees Fahrenheit for about 5 minutes. While you’re waiting for your Foodi to preheat, grease two mini loaf pans with cooking spray or butter.

Then, mix all your wet ingredients in a large mixing bowl, and all your dry ingredients in a separate mixing bowl.

Then, slowly add your dry ingredients to the wet, stirring gently until just combined.

Next, pour or scoop your banana bread batter into each of your greased mini loaf pans. Set the loaf pans onto the rack in your Foodi pot.

Close the air crisping lid (attached), and set Foodi to ‘bake’ at 325 degrees Fahrenheit for about 45 minutes. Your banana bread is done when you can insert a toothpick into the center of each loaf and it comes out clean. Once done, carefully remove your loaf pans from your Foodi and set onto a wire cooling rack. Once loaf pans are cool to the touch, remove banana bread from your pans and set onto wire cooling rack to finish cooling.

Ingredients

  • 2 very ripe bananas mashed
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  • Set Foodi to 'bake' at 325 degrees Fahrenheit for 5 minutes to preheat it, and grease two mini (5.75x3.25") loaf pans with cooking spray or butter.
  • Add all wet ingredients to a large mixing bowl and stir until combined.
  • Add all dry ingredients to a separate mixing bowl and stir until combined.
  • Slowly add dry ingredients to wet, stirring gently until just combined. Batter will be thick.
  • Pour or scoop mixture into greased loaf pans, and set loaf pans onto rack in Ninja Foodi pot. Close air crisping lid (attached), and set Foodi to 'bake' at 325 degrees Fahrenheit for 45 minutes, or until a toothpick inserted into the center of each loaf comes out clean.
  • Carefully remove loaf pans from Foodi pot and set onto wire cooling rack. Once pans have cooled and you can safely touch them with a bare hand, remove loaves from pans and allow to finish cooling on wire cooling rack.

Notes

  • Store any leftovers in an airtight silicone storage bag or plastic storage bag for up to 5-7 days.
  • Preheating the Foodi is important, so don't skip this step! 
  • Safety first! I love using my silicone oven mitts when baking with my Ninja Foodi.
