Parmesan Roasted Green Beans

Parmesan roasted green beans are a simple and delicious side dish to serve alongside practically any entree.  How could you possibly go wrong with golden-brown parmesan cheese?

Simple and delicious veggie sides are my love language, I swear. :P  There’s just something much more exciting and interesting about eating veggies when they have some garlic and parmesan cheese on them, am I right??  These parmesan roasted green beans are right up my alley, and with only 4 ingredients, they’re a breeze to throw together!

Honestly, the hardest part is trimming all the green beans, and that’s not even hard, just time consuming.  You can either cut off the ends on a cutting board, or use a kitchen shears to trim them.  Or actually, I think a lot of grocery stores sell pre-trimmed green beans now, so you could even go that route to save yourself some time and effort!

Then, just toss your green beans with the olive oil, garlic, and parmesan cheese.  I like to do this in a bowl, but you could even do it directly on your baking sheet, though sometimes it’s a bit harder to make sure everything gets evenly coated that way.  Less dishes though!

Then, spread your green beans evenly onto a baking sheet lined with a silicone baking mat.  It’s especially important that your baking sheet is lined with something because parmesan cheese has a tendency to stick to things if given the chance.

Roast in the oven at 400 degrees Fahrenheit for 20-25 minutes.  Your green beans are done when they look a little shrively and the parmesan cheese is golden brown.  I mean, don’t those look mouth watering??  I certainly think so!

Ingredients

  • 1 lb green beans trimmed
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1/4 cup parmesan cheese shredded

Instructions

  • Preheat oven to 400 degrees Fahrenheit and line a baking sheet with silicone baking mat, parchment paper, or foil.
  • Whisk together garlic, olive oil, and parmesan cheese in a small bowl. Pour over green beans and toss to coat.
  • Spread green beans evenly onto prepared baking sheet and roast in preheated oven for 20-25 minutes, or until beans start to shrivel and parmesan cheese is golden brown.

Notes

  • Swap out green beans for broccoli, cauliflower, brussels sprouts, or whichever veggie you'd like!  Just note that cook times may need to be adjusted depending on the veggie you select.
  • Store leftovers in an airtight glass container in the refrigerator for up to 3-5 days.
