Ever since I got my first food processor a few months ago, I’ve been experimenting with so many different flavors of hummus!  I’m a big fan of snacks, and hummus makes the the perfect snack pairing.  Carbohydrates from the apple slices, pretzels, or pita chips gives you that immediate pick-me-up of energy that you need.  And the protein from the hummus gives you the longer lasting energy and satiety factor.  Lately, this snickerdoodle hummus has definitely become one of my go-to snacks to help me get through that afternoon energy slump.

I always have the ingredients for this hummus on standby.  That’s another thing I love about this recipe, you don’t need anything fancy.  Everything in it is pretty common fare in the average home kitchen and almost all of it is shelf-stable.  So it’s ideal to just have the ingredients ready for when the snack craving hits!

Best of all, it’s unbelievably easy to throw this hummus together!  Just pull out your food processor, dump everything in, and blend!

Ingredients

  • 1 (15 oz) can chickpeas drained and rinsed
  • 2 tbsp almond butter
  • 2 tbsp honey
  • 2 tbsp milk of choice (I typically use soy milk)
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 1/8 tsp baking powder

Instructions

  • Combine all ingredients in a food processor and blend until smooth, about 2 minutes. Scrape the sides of the food processor and blend for another minute.
  • Serve with apple slices, pretzels, pita chips, etc!

Notes

  • To make vegan, use a plant-based milk and agave nectar or another liquid sweetener instead of honey.
  • If hummus is too thick, add a bit more milk to thin it out.
  • Store hummus in an airtight glass container in the refrigerator for up to 1 week.
